Ingredients: 1 Egg (at room temperature)
1 tsp Dijon mustard (regular yellow mustard is also working); you can also skip it, but it gives a nice flavour.
2 tsp Apple cider vinegar or white wine vinegar
1/4 tsp Sea salt
1 cup Avocado oil (you can use olive oil or peanut oil)

Hand Blender
Straight-Sided wide-mouth glass jar (min 3" wide Max 4" Do not use a bowl)
Instructions
1- Grab the glass jar and crack an egg into the bottom of it.
2- Add the rest of the ingredients on top of the egg, except the oil.
3-pour the oil on top very slowly; make sure not to disturb the egg or order of ingredients as you add them.
4- Slowly submerge the immersion blender at the bottom of the jar.
5-Start to blend for about 25 seconds. You will see that most of the jar starts to turn white. Then, slowly move the blender upward, Once you reach the top of the oil, slowly move it back downward. Repeat a couple of times, and the yummy mayo is ready!
6- Store it right in the jar, in the refrigerator.
